Rosetta, Rosa, and Sovrana cookers feature a dedicated spot for a simmering pot built into the cast-iron top. When you remove the cast-iron protective piece, you can place the pot in its designated spot. The bottom of the simmering pot is shaped to sink partly inside the cooker, allowing the heat from the cooker to transfer efficiently to the pot.
